Bacillus subtilis is a Gram-positive rod. It is spore-forming, motile and is an obligate aerobe (although in anaerobic conditions in complex media containing glucose, weak growth and fermentation can occur).
Information in regard to Bacillus subtilis in relation to food safety is somewhat in it's infancy, but the organism has occasionally been implicated in incidents of food poisoning. The main symptom of Bacillus subtilis food poisoning is acute vomiting, although diarrhoea quite commonly follows. Bacillus subtilis has been implicated in food poisoning caused by "ropy" bakery products, custard powder, synthetic fruit drinks, mayonnaise, meat pasties and pies. |
