The Development Scale Cooker/Agitator is a batch, electric cooker. The cooker hot plate is designed to mimic steam. The agitator is variable speed.�

Products that can be successfully produced on the system include, but are not limited to, sugar based hard candy, sugar-free hard candy, hard candy with full cream, caramels, white caramels, fruit preps, jellies with temperature sensitive fruit juices, bakery fillings with dairy components, and various nutraceuticals containing active ingredients.

The BLT Cooker/Agitator is an efficient tool for producing samples:�

Large capacity heating system�-�uses a 1000 watt heating system.
No steam required; no scorched product to discard -�the heating system functions like steam, without the worry of steam.� The heating system eliminates scorching of your results, often found in stove top cooking.
Excellent “batch-to-batch” consistency of your test product�- you control the cook plate temperature and the agitation speed for each batch.�

Cook under vacuum, while using agitation. You can use agitation and cook under vacuum, both at the same time.�The optional Vacuum Lid and self-contained pump and condenser (with all interconnecting hoses and clamps) make it easy for you to set up the cooker for vacuum cooking. All you need is a sink nearby.

The Development Scale Cooker/Agitator is designed to cook 200 - 1,200 grams of product (depends on recipe/process) at vacuums up to 620 mm Hg.�

A variable speed agitator can be supplied with the cooker, up to�180 rpm.� The agitator can also be supplied with an optional warming plate for pre-heating ingredients prior to cooking, or for blending in minor ingredients after cooking.� The agitator drive swivels and can be used to agitate on either side.

The cooker can be purchased with a special lid for vacuum cooking, transforming the machine into a small batch vacuum cooker. A vacuum pump and condenser can be supplied if the lab does not have house vacuum.
